Gathering together to kick off the first days of summer is something each and every one of us likely has on the agenda over the Memorial Day weekend.  Be it at the lake or simply congregating with friends, a get together just wouldn’t be the same without some GOOD food added into the festivities.  While we always have you styled and dressed to impress for a patriotic holiday, we are happy to share some food ideas that will earn rave reviews equally as well.

While putting something yummy together can be a bit all-consuming, it should also be fun and the appearance reflect that!  No need to waste a whole day in the kitchen and miss all the fun.  Let’s peruse a few menu options to get you through the upcoming Memorial Day holiday weekend that will allow you to get into the celebrating as well!

The following are some simple ideas that require little kitchen time.  With just a few ingredients, these food options can be assembled the day of.  Let’s see what’s cookin’…

1.Patriotic French Toast – Start the day off right with a festive breakfast.  This is a savory dish with a lovely, fruit topping that gets anyone excited about the day!

  • sliced strawberries
  • ½ teaspoon ground cinnamon

Directions: Combine milk, eggs, vanilla, and cinnamon in bowl.  Dip each slice of bread in the mixture then brown each piece in a pan on the stove at low heat (likely 2 minutes per side).  Top with fresh berries and sprinkle confectioners ‘ sugar on top for additional sweetness.

2.Watermelon Salad – The perfect side to take to any party!  This easy-to-assemble dish is light and so yummy!

  • 2 tablespoons lime juice
  • 2 tablespoons honey
  • olive oil
  • salt
  • ½ watermelon cut into cubes
  • 2 cups chopped cucumber
  • mint leaves, chopped
  • basil leaves, chopped
  • ½ cup crumbled feta cheese

Directions:  Assemble first 4 ingredients in a small cup and mix.  Put watermelon, cucumber and feta in a serving bowl and stir.  Pour the “dressing” over salad and top with basil and mint.  Voila!

3.Strawberry Trifle – This dessert looks complicated but it is NOT!  It would be a showstopper served in a trifle bowl BUT you could layer this recipe really in just about anything!

  • angel food cake (cheat and but one in the bakery section at the store)
  • 2 blocks of softened cream cheese
  • 1 cup heaven whipping cream
  • 2 tablespoons confectioners’ sugar
  • 2 teaspoons vanilla
  • 6 cups chopped strawberries (you can buy frozen and already chopped…just thaw before!)
  • whipped cream

Directions:  Chop up the angel food cake into bite size pieces and make a layer at the base of your dish.  Combine the cream, sugar and vanilla in a bowl and top the cake layer with this mixture.  Then, pour chopped strawberries on top.  Repeat this process one more time and you have a lovely layered, and delicious, dessert to share!
